I started my Xmas baking earlier this year, as I had promised a batch for a friend who was hosting a charity sale.
I made three sort of Xmas cookies: Matcha tea Xmas tree biscuits, chocolate bubbles and honey bread snowmen biscuits.
This recipe is a wonder to make, it is very easy, a real pleasure to work, the dough is smooth and the smell is just fantastic. Put on some Xmas carols while baking to get it all!
You will need:
- 125 grams kamut flour (150 grams if the egg is large)
- 125 grams rice flour (150 grams if the egg is large)
- 100 grams butter
- 75 grams coconut sugar
- 75 grams brown sugar
- 50 grams honey
- 50 grams maple syrup
- 1 egg (beaten)
- 1/2 tea spoon cinnamon
- 1/2 tea spoon grounded ginger
- 1/4 grounded cloves
- 1/4 grounded nutmeg
Pre-heat the oven on 180 C (oven fan)
Sift the flours in a bowl and add all the ingredients. Blend them together until you can form a ball with the dough. Let it rest in the fridge for about 20 min.
Roll out the dough until about 5 mm high and cut it with your favourite cutter.
Bake them for 12 to 15 min until golden brown.
