museli muffins opinel


This is another recipe from the “back to school” series.I like the idea of those muffins as they are complete in many ways. The chia seeds and museli (which is one with no added sugar and no wheat) bring nutrients, the honey brings good sweet, the chocolate chips brings some yum-yum and the spices bring lot of flavours. They could be used for a good breakfast or snack along with a fruit and will avoid sky high sugar level. I have used kamut flour as well as well as tsampa, which I talked about here.

To make those muffins you will need:

  • 80 grams kamut flour
  • 80 grams tsampa
  • 2 eggs
  • 65 grams butter
  • 70 grams honey
  • 75 grams museli 
  • 30 grams chocolate chips
  • 20 grams chia seeds
  • 10 cl milk
  • 1 tea spoon cinnamon
  • 1 tea spoon ginger
  • 1 tea spoon vanilla extract
  • 1 tea spoon baking powder

Preheat oven 190 C (fan oven). In a pan heat the milk on a low-medium heat and add the butter so it melts.  Mix the eggs with the honey. Add then the flours mixed with the baking powder alternating with the butter/milk mixture to the egg/sugar mix and blend until well combined. Add then the spices (cinnamon, ginger and vanilla) and combine well. Add the museli and mix well. Finally incorporate the chocolate chips (which have coated in flour to avoid them to “sink” in the muffins).

Put the batter in a muffin tin, you will get about 8 muffins. Bake them for about 15-18 minutes and let them cool a little while before you enjoy them.
