Those delicious cookies are packed with goodness such as pecan nuts, Chia seeds (which are super foods) and ginger. There are crunchy on this outside and deliciously soft on the inside thanks to the peanut butter. To bake them, you will need:
- 80 grams of soft butter
- 100 grams of Sucanat (non refined sugar)
- 110 grams rye flour
- 110 grams spelt flour
- 5 grams baking powder
- 1 egg
- 160 grams peanut butter
- 140 grams of dry mix (Chia seeds, pecan nuts, chocolate chips, candied ginger)
Preheat the oven 160°C fan. Whisk the butter and the sugar until well combined. Add the egg and mix again. Mix the flour and the baking power and sift it gradually to the previous mix. Add in then the peanut butter and mix thoroughly. Once done, add in the dry mix and blend in roughly. Bake for about 15 min.
